Grill or pan-sear chicken thighs over medium heat for 6–7 minutes per side, until fully cooked and golden brown. Set aside.
In a small bowl, mix 2 tbsp mayo, 1 tbsp Sempio Gochujang, 1 tsp honey, and ½ tsp lemon juice (optional). Stir until smooth.
Toast the buns: Spread butter (optional) on the buns and toast them in a pan or toaster until golden.
Assemble the burger: Layer the lettuce on the bottom bun, place the grilled chicken, add spicy mayo generously, and top with tomato and onion slices. (You can use either red onion or white onion depending on your preference.) Cover with the top bun and serve immediately.
