Umami Rich Vegetable Soup
A vegan consommé
Ingredients (serves 4)

1/2 leek, sliced
1 carrot, diced
1/2 onion, diced
1/2 cabbage, roughly chopped
1900ml water
2 tbsp Sempio Soy Sauce
Black pepper (optional)
Fresh herbs (optional)
How to make it

In a large pot over medium heat, add vegetables and water and bring to a boil. Lower heat to low and slowly simmer for 45 mins.

Strain vegetable broth through a sieve, reserving vegetables to eat separately, then add the broth back into the pot.

Stir in Sempio Soy Sauce right before serving.

Serve with freshly-ground black pepper and fresh herbs, if you like.
