Simple Minestrone
Powerful flavor from plants, that's clean, delicious and healthy
Ingredients (serves 2)
1 garlic clove, sliced
½ small carrot, peeled and sliced (50g)
½ celery stalk, peeled and sliced (20g)
½ small red onion, chopped (50g)
½ cup diced tomato (100g or ½ tomato)
2 Tbsp. olive oil
3 cups water
½-cup pasta shells (50g)
4 tsp Yondu Plant-based Umami Broth Vegetable flavor
1 cup Tuscan kale, packed (25g)
½ cup cooked read beans (75g)
Parsley, chili flakes (optional)
How to make it

In a pot over high heat, combine garlic, carrot, celery, onion, tomato and olive oil. Cook for 3 minutes stirring.

Add water and bring to boil. When it starts boiling add pasta and cook for 7 minutes.

After 7 minutes, add kale and beans and cook for extra 3 minutes

Serve with minced parsley, toasted bread and chili flakes (optional)
Tip
Use any vegetables you have: Broccoli, zucchini, bell pepper… as you chop them you can put them in the pot and then cook all together.
