No-chicken noodle soup

An easy plant-based version that tastes just like the original

Ingredients (serves 2)

½ carrot, peeled and sliced

½ celery stalk, peeled and diced

1 garlic clove, minced

1 Tbsp. olive oil

4 cups water

2 Tbsp. Yondu Umami Broth No-chicken flavor

¼ tsp dried thyme

2 cups noodles (80g)

Black pepper and chopped parsley (optional)

How to make it

  1. In a pot over medium heat, combine potato carrot, celery, garlic and olive oil and cook for 3 minutes

  2. Add water, Yondu Umami Broth and thyme. Bring to boil.

  3. Add pasta and cook 10 minutes or for the time indicated in the package

  4. Serve topped with parsley and black pepper (optional)

Tip

You can use Yondu Umami Broth instead of regular broth for a traditional chicken noodle soup with chicken and you will not notice the difference with a regular chicken broth!
